"Toothpaste" Brownies

These got coined “toothpaste” brownies by our campers due to the minty frosting. This is not a recipe loved by all; some girls just don’t enjoy a chocolate-mint combo. But if you do, these are rich and gooey - cut up into small squares - they are the perfect treat for your sweet tooth.

To simplify, we recommend that you use your favorite brownie mix. At camp we often use a fancy Krusteaz mix if our baker has the day off.

Ingredients for Chocolate Glaze:

  • 1/3 cup milk

  • 1/3 cup butter

  • 1 ¼ cup sugar

  • 1 teaspoon vanilla

  • 1 cup semi-sweet chocolate chips

 

Ingredients for Peppermint Frosting:

  • 1 cup unsalted butter softened

  • 4 cups powdered sugar

  • 2 tablespoons milk or heavy cream

  • 2 teaspoons peppermint extract

Step One:

Bake your brownies according to the package directions and set aside to cool completely.

Step Two:

Make the peppermint frosting by blending butter, sugar, and milk. Add the extract one teaspoon at at time, possibly pausing as you go to taste it. If you like it less minty, don’t add as much. If you like it stronger, add more - but be careful - peppermint extract is really strong!

Note: At holiday time you might add a little green food coloring - or even red to make a pink color.

Step Three:

Frost the brownies with the peppermint frosting and put the pan in the refrigerator for several hours. If you don’t have time, put the pan in the freezer for as long as you can. You want the frosting cool as you can get it for the next step.

Step Four:

Make the chocolate glaze frosting (optional). This is a great recipe that is quick and easy - and can be used for all sorts of treats!

  1. Combine butter, milk and sugar in a small saucepan.

  2. Bring to a boil over medium high heat and let boil for 45 seconds.

  3. Remove from heat and whisk in vanilla and chocolate chips until smooth and shiny.

  4. Immediately pour over 9x13 cake or brownies.

Let cool completely to set. Cut carefully with a sharp knife - enjoy!
